Bon appetit, as they say in Doncaster and Dublin. It is time for what a restaurant would call an amuse-bouche – a small treat that hints at the glorious delights to come.

The idea is that a chef gets your juices flowing before the main dishes arrive by rustling up a mouthful of lobster toast, pickled baby beetroot or other exquisite delicacies.

Racing fans' appetites for jumping have been sated by the four-course meal of the Cheltenham Festival and there is another serving on the horizon with the Grand National taking place a fortnight on Saturday.
